Step 2: Add lemon juice, extra virgin olive oil, kosher salt, and black pepper to a small bowl and whisk together.

  • 2 cups fresh arugula
  • 2 cups fresh baby spinach
  • ¼ cup shaved Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons extra virgin olive oil

  • Optional: 1 orange peeled and sliced
