Italian tomato salad in a serving bowl surrounded by fresh basil, tomato, and a serving spoon.

This easy Italian Tomato Salad takes me right back to my grandma’s kitchen, where it was a go-to dish, especially when her garden was bursting with ripe tomatoes. She grew the best tomatoes and fresh herbs on her little patio, and every summer, this simple Italian tomato salad was always on the table. There is just something about fresh summer tomatoes! My favorite part? Dunking big chunks of crusty, Italian bread into the leftover juices—tangy, garlicky, and so full of flavor. It’s simple, fresh, and just like Grandma used to make, bringing a little slice of summer to every bite. It's the perfect summer salad.

Ingredients and Substitutions

Ingredient for Italian tomato salad which include ripe tomatoes, sweet onion, red wine vinegar, extra virgin olive oil, garlic powder, kosher salt, granulated sugar, ground black pepper and, fresh basil leaves.
  • Ripe tomatoes - Fresh, ripe tomatoes are essential for a flavorful salad. They should be firm yet juicy. Roma or heirloom tomatoes are If fresh tomatoes aren't available, you can use grape or cherry tomatoes as an alternative, though they may slightly alter the texture of the salad.
  • Sweet onion - Sweet onions add a mild, pleasant flavor without overpowering the salad. If sweet onions are unavailable, you can substitute with red onions or shallots for a similar taste, though they may add a bit more sharpness.
  • Red wine vinegar - Red wine vinegar provides a tangy kick that complements the tomatoes. If you don’t have red wine vinegar, balsamic vinegar can be used for a sweeter, richer flavor. Lemon juice can also serve as a substitute for a bright, citrusy twist.
  • Extra virgin olive oil - Extra-virgin olive oil adds a smooth, rich flavor and helps balance the acidity of the vinegar. If you prefer a lighter taste, you can use a mild olive oil or another neutral oil like canola or sunflower oil.
  • Garlic powder - Garlic powder enhances the flavor without the texture of fresh garlic. If you prefer a more robust garlic flavor, you can substitute with 1-2 cloves of minced fresh garlic.
  • Kosher salt - Kosher salt is used to season the salad and enhance its flavors. If you only have table salt, use it sparingly, as it is more concentrated than kosher salt. Sea salt can also be used as an alternative.
  • Granulated sugar - Granulated sugar helps to balance the acidity of the vinegar. If you prefer a different sweetener, you can use honey or agave syrup, though the sweetness level may vary slightly.
  • Ground black pepper - Ground black pepper adds a subtle spice to the salad. If you prefer a milder flavor, you can use white pepper or simply reduce the amount of black pepper.
  • Fresh basil leaves - Fresh basil adds a fragrant, herbal note to the salad. If fresh basil is not available, you can use dried basil, though the flavor will be less intense. Alternatively, other fresh herbs like parsley or oregano can be used for a different twist.

Step 4: Let the salad sit at room temperature for 15-20 minutes to blend the flavors.

Top tips

Use Ripe Tomatoes: For the best flavor, choose ripe, juicy tomatoes. They’ll add the perfect sweetness and texture to the best summer salad.

Chill Before Serving: While the salad benefits from sitting at room temperature, chilling it for a bit can enhance the flavors even more.

Adjust Seasonings: Taste and adjust the seasoning to your preference. If you like it tangier, add a bit more vinegar. For extra sweetness, increase the sugar slightly.

Fresh Basil: Add the basil just before serving to keep its flavor and aroma fresh.

Make Ahead: This salad can be made a few hours in advance, but avoid adding the basil until right before serving to keep it vibrant.

Variations

Spicy - Add crushed red chili pepper flakes to the delicious salad for an extra kick. For a milder heat, try banana peppers.

Deluxe - Enhance the salad with bocconcini for a creamy touch. Add steamed and cooled green beans to make this salad more robust. )

Storage and Make Ahead

Storage: Store any leftover salad in an airtight container in the refrigerator. The salad is best consumed within 1-2 days. The tomatoes may release additional liquid over time, so give the salad a gentle stir before serving.

Make ahead: Quarter the tomatoes with a sharp knife and thinly slice the sweet onion. Store the cut tomatoes and onions in separate airtight containers in the refrigerator. Whisk together the red wine vinegar, extra virgin olive oil, garlic powder, kosher salt, black pepper, and a pinch of sugar. Prepare the dressing and store it in a small jar or container with a tight-fitting lid in the refrigerator.
