This Mini Antipasto Skewers recipe is one of my favorite appetizers to make when we’re entertaining. It’s simple, colorful, and packed with bold Italian flavor in every bite. Antipasto has been a staple at our family gatherings for years! These skewers are easy to make, easy to eat, and the kind of thing that disappears fast at any party. Whether you’re serving a large crowd or just need something quick for a day poolside, this recipe is a go-to.

One of the best parts about these mini skewers is how versatile they are. You can swap things in or out depending on what you have on hand or what your people love. Fresh mozzarella balls – These bring a creamy texture and mild flavor that helps balance the saltiness of the salami and the brininess of the olives.
Marinated artichoke hearts – The tangy marinade adds depth, and cutting the pieces in half helps them sit nicely on the skewers.
Fresh basil leaves – Use whole leaves for a bright, herbal punch that ties everything together beautifully.
Roasted red peppers – These add sweetness and color. Slice into bite-size chunks so they skewer easily.
Green olives – I used a jar of pitted green olives with pimentos, but you could use black olives if preferred.
Step by Step Instructions

Step 1: Cut each slice of salami in half. Thread one piece of salami onto a small skewer.

Step 2: Add a quartered artichoke heart.

Step 3: Slide on a chunk of roasted red pepper.

Step 4: Add a basil leaf.

Step 5: Follow with one mozzarella ball.

Step 6: Finish with a green olive. Continue building skewers, place on a platter, and drizzle with olive oil and balsamic glaze.
Storage and Make Ahead
Storage: Once assembled, keep the skewers in the fridge in an airtight container. Add the drizzle of olive oil and balsamic glaze just before serving so everything stays fresh.
Make-Ahead: These can be made up to a day in advance. Simply store the finished appetizer skewers in the refrigerator and hold off on the drizzle until just before serving them on the platter.
Freezing: These are not freezer-friendly. The texture of fresh ingredients, such as mozzarella, basil, and artichokes, changes significantly when thawed.

Mini Antipasto Skewers Recipe
Ingredients
- 4 ounces sliced salami
- (1) 12-ounce jar quartered marinated artichoke hearts drained
- (1) 12-ounce jar roasted red peppers sliced into chunks
- (1) 8-ounce container fresh mozzarella balls
- 1 bunch fresh basil leaves
- (1) 7-ounce jar green olives pitted
- 1 tablespoons olive oil
- 2 teaspoons balsamic glaze
- 12 small wooden skewers or toothpicks
Instructions
- Start by folding each slice of salami into quarters.
- Thread a folded salami slice onto a skewer, followed by a quartered artichoke heart.
- Slide on a chunk of roasted red pepper next.
- Then, add a fresh basil leaf.
- Follow with one mozzarella ball.
- Finish with a green olive.
- Repeat the process until all skewers are assembled.
- Arrange the skewers on a serving platter.
- Drizzle lightly with olive oil and balsamic glaze just before serving.

Great question! You can make these skewers ahead! Just be sure to place them in an airtight container or cover with plastic wrap to seal. It's best to leave off the fresh basil and balsamic glaze and add those just before serving if making ahead. Hope this helps!
