Easy Caprese Cups (Phyllo Cups)

Caprese Phyllo Cups are one of those recipes that prove you don’t need much time or effort to impress a crowd. With just a handful of simple ingredients, these little phyllo bites come together fast and always disappear first at any party. They’re light, fresh, and full of that classic Caprese flavor everyone loves, making them perfect for holidays, family gatherings, or last-minute get-togethers. I’ve been cooking for over 40 years and have learned that some of the best appetizers are the ones that take minimal effort but look like you spent all day making them, and these are exactly that.

Step-by-Step Instructions

Step 1: Remove phyllo cups from the freezer and let them sit at room temperature while you prep.

Step 2: Quarter the cherry tomatoes.

Step 3: Toss together the quartered cherry tomatoes with a pinch of kosher salt and a few grinds of black pepper.

Step 4: Spoon a generous mound of that caprese mix into each phyllo cup.

Step 5: Add a mozzarella ball to each cup.

Step 6: Add basil to each cup.
Right before serving, drizzle with balsamic glaze.

Storage and Make Ahead

Storage: These are best enjoyed immediately. If you have leftovers, store them in an airtight container to keep the crispness.

Freezing: Not recommended for this appetizer because the phyllo cups lose their cup shape and crispness.

Make-Ahead: You can prep the tomato mixture in advance and keep it in the fridge. Just fill the cups and drizzle the balsamic glaze right before serving for minimal effort.

Ingredients
  

  • 1  15-count package mini phyllo cups
  • 15 cherry tomatoes quartered (or grape tomatoes halved)
  • 15 snack-size fresh mozzarella balls quartered if larger
  • 15 Fresh basil leaves
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • Balsamic glaze for drizzling

Instructions
 

  • Remove phyllo cups from the freezer and let them sit at room temperature while you prep (they thaw fast).
  • In a medium bowl, toss together the quartered cherry tomatoes with a pinch of kosher salt and a few grinds of black pepper. Taste and adjust.
  • Spoon a generous mound of that Caprese mix into each phyllo cup. Add a mozzarella ball and a basil leaf to each cup.
  • Right before serving, drizzle with balsamic glaze. Don’t soak them ahead of time or the cups get soggy. Serve immediately and watch them disappear!

Notes

  • Use snack-size fresh mozzarella balls (or quartered if larger) so each caprese cup gets that creamy bite.
  • Choose a pint of cherry tomatoes or grape tomatoes that are firm and sweet for the best results.
  • Let the phyllo cups thaw just enough to handle, but keep them crisp for the cup shape rather than soggy shells.
  • Drizzle the balsamic glaze right before you serve so it stays fresh and the cups stay crisp.
  • If you want a little bit of heat, sprinkle very lightly with red pepper flakes right before serving.
