I’ve been cooking chicken just about every way you can imagine for years, and I’m not slowing down anytime soon. With a house full of kids to feed, chicken has always been my go-to—affordable, versatile, and easy to make into something comforting. At this point, I’d say I’m a bit of an expert when it comes to chicken dinners. My kids might even joke that they ate more chicken growing up than most people eat in a lifetime.

This Garlic Parmesan Chicken and Potatoes recipe is one of those cozy, reliable meals that I know will be a hit every time. The chicken is tender, the potatoes are buttery and full of flavor, and the whole dish cooks together in the slow cooker with minimal effort. It’s the kind of easy weeknight dinner that feels like you actually had time to plan something out.

Ingredients

Step by Step Instructions

Step 1: Rinse and quarter your red potatoes and place them in the bottom of your slow cooker.

Step 2: In a medium-sized bowl, stir together the melted butter, garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper.

Step 3: Add the chicken thighs to the bowl and coat them in the butter mixture. Place them over the potatoes in the slow cooker.

Step 4: Pour the broth around the edges to keep the seasoning in place. Sprinkle Parmesan over the chicken.

Step 5: Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the chicken is fully cooked and the potatoes are fork-tender.

Storage and Make Ahead

Once cooled, leftovers can be stored in an airtight container in the fridge for up to 3 days. The garlic parmesan sauce actually soaks in even more by the next day, making it taste even better.

You can freeze the cooked chicken and potatoes together, but for best texture, freeze in a freezer-safe container and use within a month.

To reheat, place everything in a covered baking dish and warm in the oven at 325°F until heated through, or microwave in individual portions.

This is a great recipe to prep the night before. Just season your chicken and prep the potatoes, then store everything in the fridge in separate containers. In the morning, toss it all into the slow cooker and let it do its thing.

EASY GARLIC PARMESAN CHICKEN AND POTATOES RECIPE

Ingredients
  

  • 1.5 pounds red potatoes rinsed and quartered
  • 6 tablespoons unsalted butter melted
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 6 boneless skinless chicken thighs
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley for garnish

Instructions
 

  • Place your prepared red potatoes at the bottom of the slow cooker.
  • In a medium mixing bowl, combine 6 tablespoons of melted butter, 2 teaspoons of garlic powder, 2 teaspoons of onion powder, 1 teaspoon of Italian seasoning, ½ teaspoon of kosher salt, and ½ teaspoon of ground black pepper.
  • Place 6 boneless, skinless chicken thighs in the bowl with the spices and rub the mixture all over the chicken thighs.
  • Place the seasoned chicken thighs on top of the potatoes in the slow cooker.
  • Pour 1 cup chicken broth into the slow cooker around the chicken and potatoes. Sprinkle 1 cup grated Parmesan cheese evenly over the chicken thighs.
  • Cover the slow cooker and set it to low. Cook for 4 - 5 hours on low or until the chicken reaches an internal temperature of 165°F and the potatoes are tender. Alternatively, you can cook on high for 2 - 3 hours or until the internal temperature reaches 165°F.
  • Once the chicken is done, garnish with ¼ cup freshly chopped parsley if desired, and serve with the flavorful garlic Parmesan sauce from the bottom of the slow cooker over the chicken and potatoes. ENJOY!

Notes

Adding a bit of fresh lemon zest to the garlic-butter mixture elevates and brightens the dish, especially for families and kids who may enjoy a lighter flavor profile.
Mixing in crispy bacon bits or topping the dish with them just before serving adds a savory crunch that families often enjoy.
Add vegetables such as baby carrots or green beans to the slow cooker for a complete one-pot meal.
Lightly spray your slow cooker with cooking spray before adding the potatoes to help with cleanup later.
Want even more depth? A splash of white cooking wine added to the broth gives the dish a little something extra.
